Morning is best, ideally starting between 9 and 10 am. The Medina is cooler, the monuments are less crowded, and you're back at the resort in time for lunch by the pool. In winter, afternoons also work well, and you can finish at Jemaa el-Fna as the square comes alive at sunset.
